HEALTHY Chicken Spaghetti!

Another recipe that was delicious and healthy! And, I sure will give myself a little credit; this one took more effort than just tossing the ingredients in the crock pot! Don't get discouraged, it is still very easy to make, trust me, if I can make it, anybody can make it! 

Sauteed Chicken Spaghetti with Tomatoes


  • ~2 skinless chicken breast halves, diced in 1 inch cubes
  • ~cooking spray
  • ~1/2 tsp each of dried oregano and dries basil
  • ~salt and pepper
  • ~8 oz spaghetti 
  • ~2 cups grape tomatoes; cut into halves
  • ~6 cloves garlic, smashed and coarsely chopped (I cheated and used the already minced garlic, less work)
  • ~4 tsp extra virgin olive oil
  • ~4 tbsp chopped fresh basil

Boil a large pot of salted water to cook your spaghetti in.  (Once boiling, add your noodles and cook other ingredients, some nice multitasking!)

Generously season your diced chicken with salt, pepper, oregano and basil.

Heat your large skillet on high heat, and when hot, spray with cooking oil and add chicken.
Cook until no longer pink. It took about 5 minutes or so for me. Once cooked, set chicken aside.
While your noodles are cooking away, add your olive oil to the skillet on high heat and then add your garlic. Saute until golden brown making sure not to burn. Add tomatoes, salt and pepper and reduce heat to medium-low. Saute about 5 minutes, and then add drained pasta to the tomatoes and toss well. Toss in fresh basil and chicken and top with yummy grated cheese and there you have it!

The best part is that it is only 329 calories, 6 grams of fat, 25 grams of protein! My kinda meal!

Fill-in Friday!

Oh man, let me just start off by saying the dinner I cooked last night was AMAZING! Since I had Tuesday and Thursday this week, yesterday was my night to prepare dinner. Of course, it was another recipe I had pinned on pinterest, and it was super easy! I hadn't used the crock pot in quite some time so I figured it was time to whip it out again and put it to use. Ready for some delicious-ness!? 

Crock Pot Cilantro Lime Chicken 
In your crock pot, mix together the following ingredients: 

-One 24-ounce jar medium or mild salsa.
-Juice from one lime.
-1/4 cup fresh cilantro, chopped.
-One 1.25-oz. package taco seasoning.
(It really isn't that bright, but my flash mega-enhanced the red)

Add your boneless chicken breast halves (make sure they are defrosted) to your newly created mixture and coat them with the sauce. Cover and cook on low for 6 hours, and you are done! How freaking simple is that?!


When you serve the finished product, be sure to spoon the salsa mixture onto the chicken for added flavor. We also added a little sour cream and crushed up tortilla chips on top. It was seriously delicious!

As you can tell, David was not a big fan. :-)

See, I wasn't kidding, she totally is an Angel baby! I am pleased with the pictures for taking them solo, just want to work on my lighting and shadows! I'm hoping David will help me one of these days, it sure is a lot of work trying to snap pictures of babies by yourself! Remember me posting about Averi being a teeny bit needy the other night? Well, her new favorite thing when I cook dinner now is to sit in her high chair with her mesh feeder and sippy cup. She is a happy little clam! Last night when I was fixing dinner I gave her a piece of pineapple in the mesh feeder and she was most definitely a fan! Momma's of little ones (little ones being babies), I highly recommend getting a mesh feeder. They are a safe alternative to giving chunks of fruit or veggies. Nothing wrong with giving the chunks, but I know me being the paranoid mother I am, it keeps me a little more at ease.

Dinner was DELISH!

Okay, so LD (which is David, for those of you who don't know) and I have a new dinner schedule. We take turns cooking each evening. One week I will do MWF, and he will do TThurs, and the next week we will switch. It has really motivated me to come up with actual recipes and meals because I don't feel so overwhelmed. I also have been watching how David has gotten really into using his grill lately and that has inspired me to start doing my own cooking! That being said, I have Tuesday and Thursday this week and tonight I used a salad recipe I had pinned from none other than... you guessed it, Pinterest! It turned out absolutely amazing and we will definitely be using it again. It is called The Autumn Chopped salad.

The picture isn't the best because I just snapped it with my phone instead of the actual camera. 

Ingredients

~6 to 8 cups chopped romaine lettuce
~2 medium pears, chopped
~1 cup dried cranberries
~1 cup chopped pecans
~8 slices thick-cut bacon, crisp-cooked and crumbled
~4 to 6 oz. feta cheese, crumbled
~Poppy seed Salad Dressing 
~Balsamic Vinaigrette 


And just like any other salad, combine all the ingredients and drizzle your dressing, and your done! I couldn't find the poppy seed dressing at the HEB by us, so I just used the Balsamic Vinaigrette and it turned out great. You really don't need a lot of dressing as the salad itself has a ton of flavor. The longest part for me was chopping the pears. Maybe that was because I was tending to a needy baby too. I believe she is teething again, and when she teethes she just wants to be held constantly (which I totally don't mind, but I didn't think that trying to chop pears while holding her sounded like a good idea). I sat her in her high chair with me in the kitchen and she stopped fussing when I gave her a pear to munch on and her big girl cup to drink out of. Of course, she loved it. 

Anyways, the salad was a huge hit, and I recommend everyone try it! 

Tuesday Tidbits!

  • What a wonderful weekend we had! David's sister Erica, and his nephew Eric surprised him with a visit on Saturday around noon. Erica had called me on Monday and told me her plans for coming up on Saturday to meet Averi and surprise David. I was thrilled and looking forward to it all week. Needless to say, the week went by super slow, as it always does when you are looking forward to something. The visit was wonderful, and Averi just loved getting to meet and spend time with her new (to Averi, that is) aunt and cousin! Not to mention that because of our guests, it gave us a reason to cheat a little on our diet! Muahahaha! 
  • Yesterday, I decided it was time to install Photoshop onto my laptop! I did a cleanup of the hard drive and a defrag and was on my way to amazingness. Let me just say, I have LOADS to learn with PSP Elements 10. Ahhh, overwhelming but so very exciting. While the tutorials online are great, I am most definitely ordering a book on the software. I like to be able to search for something in the index and flip right to what I need. And when we get into a house (which will hopefully be here in the near future), I will definitely be investing in a desktop vs a laptop. The laptop is great but there is some definite lagging with the new software installed. Here are just a few pictures I was playing with before bed last night: 



I was quite pleased! Not bad for a beginner! :-) I thought I had photoshop years ago, and turns out it was Paintshop Pro that I had. At the time it was very similar as far as layers and masks and such. But I am definitely a photoshop fan now. Okay, I now must venture out to the grocery store. It is my turn to prepare dinner tonight! I'll be sure to let you know how it turns out!

Friday fun!

So, I was reading one of the blogs that I follow and adore over here at A Sorta Fairytale, and the post was about the importance of posting pictures of yourself on your blog, every so often. The way she described it made sense to me. You share so much with your readers about your life, and memories, happy moments, and sad ones, and so on and so forth. Your followers need to see the face behind the camera and keyboard. Now, yes, I realize that I only have oh, like 12 followers and most of them are very aware of what my face looks like, haha. But I thought it would be fun to post a few pictures for those who maybe read my blog but aren't following it (Lord knows that is what I did for the longest time). So here we go, enjoy my ever-changing looks and hair colors from over the years!









 

Funny thing, I thought I posted this earlier today. What do you know!? I open up my laptop and there sits my draft of this post, unpublished. Ha, what can I say, I guess I get easily distracted. So now, since it is entirely too late for me to be up, I will be going to visit my bed. Goodnight everyone!

Bye, bye!

Well, Averi is now saying "bye, bye" with an absolutely adorable little wave to go along with it. You can see the video here. She also says, "mama" and "dada", but "bye bye" is the is the only word/phrase she associates with a gesture (her cute baby wave). I can't explain just how proud I am of my baby girl, not only when she learns new things, but just in general. I know, I know... I say it all the time, how much I love her, how proud I am of her, yadda yadda, but I seriously cannot help it. Being a mother to this perfect baby angel is by far the best thing that has ever happened to me in my life. 

Little Bean is also on the road to crawling! Yay! She kind of just pulls herself along, little by little, and turns in circles a bunch, but she is totaling getting there. Not that I want her to grow up any faster, I would be perfectly content if she just skipped the crawling stage. Then she would still need me to tote her around, not to mention be getting into things. :-) I will never understand why parents want their babies to grow up so fast, to crawl, walk, and talk.. I am a firm believer a baby will do things on his or her own time, and a parent should not try and rush it for his or her own sake. 

Okay, moving right along. Wasn't the weather today absolutely gorgeous?! Averi, Kehilo and I totally took advantage of it and went to then nice park up the road from our home for a little stroll. Of course, I took my camera, planning to get some cute pictures of Averi at the park in the fab weather. What do you know?! My camera reminds me that I had left my memory card in the computer at home from when I uploaded pictures last night. Sweeeeeeet. That was definitely a bummer, but, I did learn a valuable lesson; always keep a spare memory card in my camera case. That gives me an excuse to go get another one. Yippie! I did manage to get a few cute pictures with my phone. Here is one:

She is pointing at her shadow! And she hates to wear her shoes, she is for sure a barefoot baby, just like her mama!

And, lastly, as I mentioned in my previous post, I am going to be posting some of my favorite pictures as I go through old photos, and pictures from Averi's newborn time. It is so much fun to look at them and compare to how much she has grown (not to mention, how I have grown and changed over the years!).
